INGREDIENTS

HERB BREADCRUMBS

  • Pan Bread Crumbs
  • 1Tbs Capers, chopped
  • 1 Bunch Parsle, Chopped
  • 2 Cloves Garlic Chopped
  • 3 Handfuls Panko BreadCrumbs
  • 1 Handfull Parmesan Cheese
  • Salt and Pepper
  • 1 Lemon,  Zest
  • Olive Oil

SALMON

  • 3 Bulbs of Fennel Sliced
  • Olive Oil
  • 1.5kg (3lbs) Salmon
  • 1 Tsp Dijon Mustard

SERVING

  • 250g Green Beans
  • 1 head Broccoli
  • Balsamic Vinegar
  • Arugula (Rocket)

METHOD

Mix all the breadcrumb ingredients together.

Slice the fennel (1/2 inch think)

Add to a roasting tray, season with olive oil, salt and pepper and mix together

Lay the salmon on top of the fennel.  Season with salt and pepper and rub olive oil all over

Brush the dijon mustard on top of the salmon

Top the salmon with the breadcrumbs

Bake in the oven, 400oF / 200oC for 10-12 Minutes

Boil the broccoli and the green beans

Once the salmon is cooked

Remove the salmon

Add the broccoli and green beans to the roasting pan

Add the arugula (Rocket) and balsamic vinegar and mix well

Pour on to a serving plater
