- 1 Onion Finley Diced
- 2 Celery Sticks Finley Diced
- 1 Carrot Finley Diced
- Olive Oil
- 1 Handful Baby Spinach
- 500g (1lb) Ground Beef
- 250g Ground Pork
- 3 Handfull Panko Breadcrumbs
- 1 Handfull Parmesan
- 1 Egg
- 1 Jar of Tomato Sauce (Your choice)
- 1 Pack of Spaghetti
Finely chop the carrots, onion and celery
Get a pan on a medium heat, add a splash of olive oil and and sweat the vegetables for 5 minutes until translucent.
Add the vegetables into a jug or food processor. Add the baby spinach
Blitz to make a rough paste.
Decant into a large mixing bowl
Add the beef, pork, breadcrumbs, parmesan and egg, season with salt and pepper
Mix really well, make sure everything is well combined.
Shape into meatballs
Heat a frying pan, add some olive oil and start frying the meat balls
As they brown, flip them over.
Pour over the tomato sauce.
Bring to the boil, reduce to a simmer, and cook for about 10 minutes until the meatballs are cooked through.
Remove the meatballs from the sauce
Add cooked spaghetti
Add the meatballs
Garnish with Basil
