- 1lb Cooked Ham, diced
- 4-5 Asparagus Spears,
- 2 Handfuls Fresh Peas
- 6 Eggs
- 1/4 lb Comte Cheese
- Parmesan Cheese
Melt the butter in the pan, add the ham, peas and asparagus. cook on a gentle heat for about 2-3 minutes.
Add the eggs, comte cheese, chives, salt and pepper in a large bowl and whisk together.
Pour the egg mixture into the pan. Shake to make sure the eggs hit the bottom of the pan. Keep on the gentle temperature.
Once the eggs begin to set, grate over some fresh parmesan
Get in the oven, 400f / 200c for 5 -10 minutes. Until it is golden brown and eggs have shuffled up.
Season some blanched peas and asparagus with, salt, pepper, olive oil and lemon juice.
Mix some micro greens in with the peas and asparagus pile over the top of the cook frittata.
