I love making this for my wife, its a little something to make her feel special.  Best of all,  it is so easy to make, but looks really complicated.

VIDEO RECIPE

INGREDIENTS

  • 1 Chavrie Goats Cheese Pyramid
  • 1 Jar Dalmatia Fig Spread or alternative Fig Jam
  • 1 Date
  • A few Walnuts
  • A few Almonds (Try and Find Truffle Salted Almonds)

METHOD

Goats Cheese & Fig Parfait | Kitchen Daddy | Chavrie Goats Cheese (1)

For the goats cheese, I am using this brand called Chavrie.  I really like it because it has already been mixed with some cream, so it has a soft creamy texture.  If you can find it, mix a goats cheese log with 2 tbs of cream in a bowl.

Goats Cheese & Fig Parfait | Kitchen Daddy | Goats Cheese (1)

Add a few tsp of goats cheese into a ramekin.  Smooth it down, until you have an even surface.

Goats Cheese & Fig Parfait | Kitchen Daddy | Wipe (1)

Use a wet cloth or paper towel, to wipe away any excess goats cheese from the side of the ramekin.

Goats Cheese & Fig Parfait | Kitchen Daddy | Fig Jam (1)

Add a large tsp of fig spread or fig jam.  You have to be very gentle with this, so use a knife to press it into the corners.  If you press too hard all the goats cheese gets pushed up the side of the ramekin and it doesn’t look as good.

Goats Cheese & Fig Parfait | Kitchen Daddy | Wipe Fig (1)

Give it a wipe

Goats Cheese & Fig Parfait | Kitchen Daddy | More Goats Cheese (1)

Add more goats cheese and smooth over the top

Goats Cheese & Fig Parfait | Kitchen Daddy | Fig Spread 3 (1)

Top off with a thin layer of fig jam

Goats Cheese & Fig Parfait | Kitchen Daddy | Sprinkle Dat, and Nuts (1)

Sprinkle over the chopped date, walnuts and truffled almonds
